The tonic in this cocktail adds a delicate hint of festive fizz. Its herby tendencies make it a light and refreshing cocktail, perfect to counterbalance the decadent foods on offer at this time of year.
- 50ml dry gin
- 30ml fresh lemon juice
- 20ml icing sugar
- 7 sage leaves, plus 1 sprig to garnish
- Mediterranean tonic water, to top up
- Lemon slice, to garnish
- Put all the ingredients, except the tonic water, into a cocktail shaker and shake well.
- Strain into a highball glass filled with ice cubes, top up with the tonic water and garnish with a sprig of sage and lemon slice.
