Sweetness is dulled by coldness, it is why your white wine tastes cloyingly sweet if served warm, so you want the mix to be slightly sweeter than you’d think. Basil and sweet fruit go well together, you can use a sprig of mint instead if you can’t get any.

INGREDIENTS
- 400g diced watermelon flesh, large seeds removed
- 400g strawberries
- 10 basil leaves
- 40g caster sugar, plus extra to tweak
- 2 tbsps lime juice, plus extra to tweak
METHOD
1 Put everything into a blender and blitz it until smooth.
2 Pass it into a measuring jug through a fine sieve. Add a little water to make it up to 600ml, if there isn’t quite enough.
3 Tweak the sugar and lime to your liking.
4 Tip into the moulds and freeze for at least 6 hours or overnight.
