Recipe by Seasonal Spuds
Encourage the kids to get creative in the kitchen with these baked potato beasts. They’re delicious, healthy and super fun to make!
BAKED POTATO BEASTS
Serves 1
INGREDIENTS
- 1 large baking potato
- a litle olive oil
- sea salt
- a knob of butter
- 1 tbsp cream cheese
- a selection of salad vegetables, cut into pieces (red peppers, radishes, cherry tomatoes, spring onion all work well, but try whatever takes your fancy!)
METHOD
- Preheat the oven to 180˚C / Gas Mark 4.
- Wash the potato, rub with oil and sprinkle with a little sea salt. (This will help the sking to get lovely and crispy).
- Place the potato directly on to the oven shelf and bake for around an hour or until tender.
- Remove the potato from the oven and cut in half lengthways.
- Scoop out the middles and mash them in a bowl with the butter and cream cheese.
- Scoop the potato back into the skins and use your vegetables to create a magical beast.
