Serves 2-4
INGREDIENTS:
- 6 chicken thighs, boned, skinned and cut into strips
- 1 fresh root ginger, minced
- 1 tsp fresh root turmeric (optional)
- 1 tsp ground turmeric
- 1 garlic clove, minced
- A pinch of chilli powder
- Salt and cracked black peppercorn to season
- 1 tsp soy or tamari
- ½ tsp sugar or honey
METHOD:
- Put all the ingredients in a bowl and mix together. Leave to marinate for at least an hour.
- Heat a non stick frying pan over a medium heat and add two tablespoons of vegetable oil
- Add the marinaded chicken to the pan, stir occasionally until the meat is cooked through
- Add the soy sauce or tamari, honey or sugar and season to taste
- Serve hot or cold with a salad
