A tasty crowd pleaser, this avocado and prawn burger recipe is a winner for the whole family. Simple and tasty!
INGREDIENTS
- 340g raw, peeled prawns
- ½ onion, roughly chopped
- 2 celery stalks, roughly chopped
- 3 large garlic cloves
- 1 small red pepper
- 1 spring onion, finely sliced
- ¼ cup coriander leaves, chopped
- Juice and zest of ½ lemon
- 1 egg
- 2 tbsp. light mayonnaise
- 30g breadcrumbs
- Pinch of salt
- ¼ tsp. cayenne pepper, or to taste
- 2 tbsp. vegetable oil
- To serve:
- 1 avocado, stone removed
- Lemon juice, to taste
- Pinch of cumin
- 4 burger buns, halved
- 2 large tomatoes, sliced
- Lettuce leaves
METHOD
- Pulse half the prawns in a food processor until very finely chopped. Empty contents into a mixing bowl.
- Add the onion, celery, garlic, pepper, spring onion and coriander to the food processor, and pulse a few times until diced. Add the vegetables into the mixing bowl with the finely chopped prawns.
- Add the remaining whole prawns, lemon juice and lemon zest to the food processor and pulse a few times to chop. Add to the bowl with the other processed ingredients.
- Add the egg, mayonnaise, breadcrumbs, salt and cayenne pepper to the mixing bowl. Mix everything together until all the ingredients are evenly incorporated. Divide the mixture into 4 and use your hands to shape into 4 burger patties that are each about 10cm in diameter and 1.5cm thick.
- Heat the oil in a large frying pan over a medium heat. Add the prawn patties and cook for 7-10 minutes on each side, until they’re cooked through and firm to the touch.
- Meanwhile, smash the avocado in a small bowl with a fork. Add the lemon juice, chilli powder and cumin, and mix well.
- To serve, place the bottom halves of the burger buns on a flat surface. Top with tomato slices, lettuce leaves, the prawn patties and a dollop of smashed avocado. Finish with the burger bun tops.
