As I was out walking the other day I heard my first skylark of the year which to me heralds the start of spring and something very exciting: bank holidays (I’ve given up getting excited by the prospect of good weather!) Eating, drinking, entertaining friends and extra days off work, what more can we ask for?
Quite possibly the most indulgent way I can think of to entertain and really get the most out of the extra days is by hosting brunch: when else can you justify a lie in followed by leisurely time spent eating – and eating a lot.
When it comes to brunch, think excess – this is definitely not a time for diet or reservations. Quantity, quality (of course) and variety are key. Think about the time that you are hosting for. If friends are arriving around 11/12 then they may still be in the breakfast stage, however once they’ve been with you for an hour or so and have had something to eat already they may quickly head towards lunch so dishes and items that are flexible and can span across both realms work perfectly.
Eggs are an obvious choice; baked, poached, scrambled all work well. Think DIY Eggs Benedict with a selection of breads and toppings for guests to assemble; wilted spinach, smoked salmon, hams, asparagus, avocado and of course lots of hollandaise. These toppings will then all work really well with self-assembly baked eggs, a large bowl of scrambled eggs and a delicate side salad of lambs lettuce, cucumber and tomatoes.
Breakfast or lunch just wouldn’t be the same without bread, so a large platter with different baked items is essential. Croissants to pick at slowly with a cup of coffee, artisan breads that feel just a little more special and indulgent, sweet flaky Danish pastries and some breakfast-style muffins (as in the cake variety not English, although those work fantastically with the Benedict) with oats, seeds, bananas and citrus zest.
In addition to the offerings for the eggs add in some cured meats, smoked fish, cream cheese and hard cheese. These will work really nicely with the salad and also with a lightly flavoured quinoa salad or tabbouleh with lemon juice and spices to add a more savoury feel.
Drinks can’t be forgotten and fresh juice along with a punchy Bloody Mary and chilled champagne or Prosecco will really help create that indulgent, celebratory feel. Whether drunk or not, a fresh pot of coffee is a must have, nothing else can quite conjure up that incredible breakfast smell in the same way.
